23 Flavors of Deliciousness

Hello Sweets,

So its been a few days since I've posted anything, and even longer since I posted something with substance to it :/  Do you know that I actually get more down the more time between my creations, well it's true :(  My health doesn't allow me to do much of anything, so when I don't do what is within my means I get purdy down.  Needless to say if I'm posting now I obviously have had a break in my insanity, but oddly enough I still feel fairly blah-zay.  This frustrates me, and I'm not sure why I can't shake this damn funk >_<  Either way, here I am with a tasty treat to share with y'all :)  I will try and keep this post upbeat and fun, but I'm struggling with this right now.

I know many people are going to read this post and see the soda and will say it's full of sugars and processed blah blah blah.  I agree that soda is not the healthy choice, but I also subscribe to the everything in moderation philosophy.  But Dr. Pepper boasts a soda with 23 flavors, and while in Texas we prefer to get the real sugar version (btw soooooo much better).  Naturally as a Texan, Nathan LOVES Dr.Pepper, especially the cherry version.  So when I came across a version of cherry Dr.Pepper cupcakes, I couldn't pass up the chance.

Cherry Dr.Pepper Cupcakes
Ingredients
1/2C butter, softened
3 large eggs
1/2C milk
2 1/2Tsp baking soda
2 1/2C flour
2 1/2C brown sugar
3 oz unsweetened bakers chocolate, melted
1/2Tbs lemon juice
1/2Tsp salt
2Tsp vanilla
1C Cherry Dr.Pepper, cooled
 

Directions:
1)  Preheat oven 375F.  In a small saucepan bring the Dr. Pepper to boil.  Set aside so it can cool before you add it to the batter.
 

2)  In a small bowl add the lemon juice (yes I squeezed it lol) to the milk and let sit.  You can use buttermilk in replace of the lemon juice/milk concoction.  After allowing it to sit for 5 or so minutes, add the baking soda to it.
 
3)  Cream together the butter and sugar, mixing until light and fluffy (not your typical light and fluffy because the butter to sugar ratio is very unbalanced).
 

4)  Add the melted chocolate, thats been slightly cooled.  Then beat the eggs in thoroughly.
 

5)  Mix the remaining dry ingredients in another bowl.  Alternately add the dry ingredients and the milk mixture to the chocolatey sugar mix.

 

6)  Mix in the vanilla and lastly the cooled cherry Dr. Pepper.
 

7)  Pour into cupcake liners, bake for 20-22 minutes, or until a toothpick inserted into the center comes out clean.

 

Of course these bad boys aren't finished, there is a deliciously and light frosting to finish them off, but as per my torturous ways, that will be tomorrows post!  Again, like with the cola cupcakes, they're light and airy and not overly sweet.  They're not over-powered with the taste of cherry Dr. Pepper, but it has a lovely under tone of cherry.  As you know I'm a cherry junkie, so needless to say you can let your imagination run wild with how these bad boys will be finished.

So I think I managed to keep this post fairly upbeat, but frankly I am still feeling blahhhhhhhhhhh lol true story.  Hopefully tomorrow I will be in much better state of mind and can delivery something fun, exciting, and ENERGETIC!!!!  Okay maybe that was a little forced, but I'm trying lol.  Until next time..............................................................

A Whole Heart Again

Hello Sweets,

I know I've been missing for the last few days, but I have a good reason this time (although I think all of mine are valid lol).  I'm back home in TEXAS!!!!!!!!!!!!!!!!!!!!!!!!  Yup I am just that happy, no scratch that and make it ecstatic lol, to be back in the arms of my one true love :)  I even traveled to the Toronto airport in the wee hours of the morning to catch a flight at 6:45am, and I am not a morning person most likely because I don't sleep very well.  However with that being said, although I was extremely exhausted (like giggly tired) I found myself smiling and in a very very good mood even dealing with customs and security.  I guess when you are that excited to be reunited with someone you don't care how long or how far you have to travel, as long as they're there when you land.  

Today's post is just a share of photo's that was my incredibly early and a little long journey from Ontario to the great state of Texas!  Our second anniversary was yesterday, but we are celebrating our dinner tomorrow (thank you unpredictable health :p).  Instead of going out to a restaurant we've decided to make our own special dinner, everything is being made from scratch right down to fresh bread.  So over the next couple of days I will be sharing the new recipes and show you the completed romantic meal :)  I will also share with you the activity we chose to do for our date as well.  In the meantime we are going to travel from Canada to the wonderful south that is Texas ;)

Honey I'm Home!!

Hello Sweets,

Greetings from the great state of Texas (the greatest state).  I landed here this morning and have been in heaven every single moment.  Tonight's post will be short again but that is because I've had such a long couple of days, and honestly would really like to have some quality cuddle time with my love :)

So this morning I caught the red eye flight to Dallas, and anyone that knows me knows that I DO NOT do mornings well at all, which means I've had very little sleep.  The one thing I do love about early morning flights, is watching the sun rise in the sky.  Check out some of the beautiful pictures I managed to capture :)

So you know how I am constantly bragging that my soul mate Nathan is THE BEST boyfriend ever?  Well he has managed to completely amaze me again with some amazing news and a fabulous birthday gift, and I wanted to take this post to share the news with all of my lovely readers, and then I promise I will get back to baking and cooking up a storm tomorrow lol.  Anyone that knows Nathan knows he is extremely proud of his service within the US Army, specifically the US Cavalry, although he is retired, he will and always will be a part of them.  Now Nathan and  I have talked about spending the rest of our lives together, but what he surprised me with this afternoon is something I never expected, or even knew I could be apart of.  I am officially part of the "US Cavalry Order of the Garter", that means that Nathan and I are forever bonded through cavalry tradition of a declaration of the link between the woman and her trooper.  I am duty bound to forever display the traditional yellow garter if and when he is deployed, and until his safe return.  To me this a gesture of equal value as if he were to propose to me, as it is a reflection of our love and commitment to each other, forever and always.  Needless to say I cried tears of joy and couldn't be happier to accept such a wonderful token of our love.  God I have a fantastic man!

I honestly didn't think my day could get any better than that, but I should have known that Nathan wouldn't have stopped there.  For the last six months at least, my little net book has been on it's last legs.  Well for my birthday, Nathan got me a snazzy new Sony Vaio laptop!  So next blog post will be done on my new toy :) For now we are setting it up and transferring all my essential files over.  Here's a peak at my new laptop;

Going from a 10" screen to a 17.3" screen, is amazing on the eyes, and I think Nathan is most excited to teach me how to be a "gamer" (I am too to be honest, just means more time with my man ;) ).

Mini weekend catch-up :)

Hello Sweets,

I hope everyone has been enjoying their weekends.  Nathan and I are having a great time down at the Texas Motor Speedway!  Did any of you have something special going on this weekend?  I would love to hear all about it. :)  I wanted to write a quick filler blog since I am not baking or cooking this weekend, besides the batch of Pumpkin Spice Cupcakes I whipped up yesterday before the race, I wanted to give all my lovely readers an update.

Well we just finished day two of three of our race weekend, which means the longest race is tomorrow, which also means it's the most exciting day. :)  Now I know not everyone likes racing, or maybe you don't know much about it either.  I was that person (both ways) up until April of this year.  Nathan, his dad, cousin, and uncle all get season tickets every year out at the Texas Motor Speedway, and for 3 weekends a year, they are next to unreachable lol.

Last year at Christmas time, Nathan had asked me if I liked racing, or if I'd be willing to go to a race and see what it was all about.  Now I was one of those people who always thought there really wasn't anything interesting about racing (ask me to go to a hockey game and I'm in!).  But I love him, and love sharing past times with him almost as much, so of course I said yes, and for the April races his dad told me I could have his ticket :) (so sweet of him, since I was a newb and all).  First, and really only concern of mine, was the noise.  Now anyone who knows me, knows I suffer from daily migraines (it's a really good day if I DON'T get one :( ), but they reassured me I wouldn't have an issue since they had noise cancelling headsets.  I was a little weary as to how well they would work, but I'll be damned, they work wonders, and made it extremely easy for me to enjoy the races!  Not to mention they have scanners that allow you to listen to the drivers and their crew.  This is one aspect I REALLY enjoy, but once Nathan explained all the science that goes into the whole ordeal, I was officially a NASCAR girl!  I thoroughly enjoyed my first experience with NASCAR, and ever since April I have been given a ticket to go with them :) (they love me lol).

Really the best part of a NASCAR weekend, is the tailgating you do before and after!  You and your friends arrive at the speedway at least a few hours before the race to sit, chat, grill a few hot dogs, and maybe make some friendly wagers in the parking lot before heading in.  Just about thirty minutes before the race is set to start, we make our way to the seats (which by the way have a COMPLETE view of the track!), get all settled with the headsets and scanners just in time for the famous "Drivers, start your engines!".  Because we have two sets of radios, one a scanner for the drivers/broadcast, and one to talk to each other, we can listen to the drivers talk smack, and of course, smack talk each other lol, all in good sport of course.  Once the race is over, the driver does his victory lap complete with a "smoke show" burnout, the fireworks adorn the backstretch, then it's back out to the the parking lot to wait at our little tailgate party/BBQ while the traffic thins out.  The best part of tailgating at NASCAR is really two things; 1) meeting new people and 2) seeing that complete strangers will help you out even if you didn't ask, they really are super sweet people.

While I was packing up all the baked goods I made (officially the popular baker of NASCAR now lol), and all the other miscellaneous items we needed, I grabbed a tin of Altoids.  Now I'm not sure if any of you have had Altoids before, but I never buy them so I did not know about their "curiously strong facts".  Well this particular tin had a "fact" that had me in tears because I was laughing so hard that I just had to share it with all of you in my blog world :p

Of course Nathan, being raised a proper southern gentlemen, walked with me for a little while to check out the vendors and what they were peddling to the public.  We came across a cute little vendor called "Race Angels".  They're geared strictly towards women and sell really cute racing related items.  I thought we were just window shopping but when I said "are you ready to go back?", Nathan replied "well did you see something you liked?", and of course, I did.  Needless to say, Nathan bought me a cute little "racing princess" t-shirt.  I absolutely love it, and will be wearing it tomorrow!  The sales girl mentioned a shirt that was on sale for $10, but after he had already paid with his card (I'm sure she didn't make that mistake again tonight lol).  Needless to say, we're going to wander back down tomorrow, and if it's still there, we're going to make them an offer they cannot refuse!  
Isn't it pretty? :)  He spoils me so much!

Well we are both exhausted and have to try and get to bed at a half decent time as tomorrows race is a day race, so that means I need to get some beauty sleep or strong coffee in the morning lol.  Until we do though, this is what we're doing/ where we'll be;

I promise a full NASCAR dedicated post, probably Tuesday, as I forgot to pack my computer adapter for my camera, lol figures, but I'll do a couple mini ones tomorrow and Monday.  Until next time......

Lone Star Love

Hello sweets,

Well we've made it to the middle of the week, and I'm not sure about you guys, but I am officially exhausted! My health hasn't been very good the last week, so I'm usually drained by mid afternoon :(, which also means I have not been cooking very much.  So I thought I would blog about the only other thing that is more important to me then being in the kitchen......the love of my life and my biggest supporter, Nathan :)

Four and a half years ago, my uncle Michael decided to come up to Canada for a visit (my family is 75% American and living in the USA).  My cousin Steve was home from serving in Iraq with the 10th Mountain division, and my uncle wanted to take us to see him since it had been a LONG time, and it was Steve's birthday (June 2008).   Now my cousin Steve and I had been chatting online since he got back stateside, and kept talking up his roommate, Nathan, to me and telling me that we would get along very well as we had very similar personalities.  The funny thing was that both Nathan and I had some less than desirable experiences with our latest partners, so both of us we very hesitant, but were opening to meeting each other.  Of course, my sister and I said yes, so we piled into my uncle's truck and made the six hour trip to Fort Drum, NY.

When we finally arrived, we met Steve at the hotel we were staying at, caught up a little, then went and got supplies for the birthday party!

After getting back to the hotel, we waited for Steve's friends to arrive and celebrate both Steve's birthday, and that all the boys came home safe.  Of course the entire time, Steve is telling me how much I am going to like his roommate, Nathan, and that we will hit it off right away.  Meanwhile,  inside I am getting more and more nervous to met this amazing man lol.  Well everything Steve said was true.  Nathan was smart, funny, handsome, and extremely polite (he is from Texas after all).  Needless to say we hit it off as soon as we met, and  it was like meeting an old friend.  We chatted for hours, and were often called out for segregating ourselves from the group lol!

For the next four months Nathan and I sent numerous texts back and forth, and spent hours chatting online, sometimes until the wee hours in the morning.  Then in October, I decided I wanted to see him again, and I decided to drive to Fort Drum, since when I went to visit my grandparents in Oklahoma in August (5 hours from where he lives in Texas), we missed each other by 1 day. :(  So I made the 6 hour drive to spend 24 hours with Nathan, the man whom I could not stop thinking about all day and night!  Needless to say we had a wonderful time; a nice dinner with great conversation, and a wonderful gentlemen.  I left with a smile on my face, and knew that I had met the man I would spend the rest of my life with.  

Now I know what you're thinking; how could I be so sure when we had only known each other for six months?  Well you know all the cliche things in romantic movies; butterflies, day dreaming, all the things that make you scoff and say that's not real!  Well that is exactly what I was feeling (and what he was trying to deny lol), and I knew there was no way I was going to let him get away easily.  Now for the next three years, we only saw each other every August for a couple of days at most.  They were always romantic and unforgettable, but we didn't try to start a relationship.  Nathan told me from the get go that long distance relationships were hard to maintain (he knew from being in Iraq, and I had never been in one), but there was something nagging inside me that we would be able to make it work.  I respected his decision, and we both tried to move on with our lives, but remained close and talked every now and then.  Little did I know, some of his best friends and mother were telling him that he was crazy, and that clearly this girl really cared for him, and seemed wonderful (their words not mine!).  One of his oldest friends even told him that he couldn't be mad that I was dating someone at one point, because he told me to do so lol.  
Well in August 2011, I went to spend a week with my grandparents in Oklahoma, and of course I let him know I would be there.  He asked if I would come and visit him for a day or so (he had to travel to back to Washington to deal with some work stuff), and I said as long as it was okay with my grandparents, I would be there.  Now everyone, and I mean everyone in my family knows how happy I am when I'm around Nathan, so they of course said yes!  So I made the five hour drive back to Dallas to spend a little over a day with him, and then drove back to my grandparents with an ear to ear grin. :D   Now little did I know, everything Nathan's friends and family had been telling him, and his feelings for me, had finally manifested into undeniable feelings.  So with two days left in my vacation, Nathan called me to see if I would come back, only this time to meet his parents.  I spoke with my grandma Oburni, and her, my grandfather, and I all agreed that things were changing.  You don't meet someones parents for the heck of it.  Five hours later, I was back in the arms of the man I had been chasing for four years and meeting his parents for the first time (they're awesome!).  The rest, is clearly history, since it's now 14 months later!
I am not super close with all of my family, but what Nathan has with his, is what I've always wanted :)  They are all very close, always there for each other, and would do anything at the drop of the hat!  A perfect example of how much they care for each other, would be what happened last night.  Nathan got a call from his uncle that his mother was being rushed to the hospital, which is 45 minutes away for us, with a possible heart attack :(  On our way rushing to the hospital, we got a follow up text saying they confirmed it was NOT a heart attack, but they didn't know what was causing her pain and shallow breathing.  So from 9:30pm to 5am this morning, Nathan, his uncle Michael, his aunt Cindy and I all stayed by his mother Darra's side.

They finally figured out what was wrong, and it was nothing that couldn't be helped with medication, and it's not life threatening, but it's moments like these that make you thankful for the people closest to you, and not take a single moment in life for granted.  Needless to say, his entire family loves me (they tell him and I this all the time), they have already given me the "honorary Texan" title, and say I am family already!  I never thought that love like you see in the movies was real, but I am living in my very own romantic fairy tale, and yes, I know to some it's gross but I love it!

The very first "southern" recipe that was handed down to me, from my grandma Oburni, was for Southern Sweet Tea (ironically taught to me days before meeting Nathan's parents lol).  Now I have always loved iced tea (sweet tea in Canada), but once I tried sweet tea I can't drink the pre-made stuff anymore lol!

Southern Sweet Tea
Ingredients
1 Tazo Black Tea iced tea bags
3Tbs of honey
3/4C sugar
1 lemon, sliced
2C Ice
All the fixin's

Directions:
1)  Boil 1 quart of water, with the tea bag in the water before it starts to boil.

2)  While the water is boiling,  slice the lemons in at least 5 slices.

3)  When the water starts to rapidly boil, remove from heat as to not cause the tea bag to open.

4)  Add the sugar and honey into a large pitcher.  You can add more or less depending on your preference of sweetness.

5)  Remove the tea bag and pour into the pitcher.  Stir thoroughly and then add 2C of ice.

6)  As the finishing touch, place the lemons on top and put in the refrigerator to cool.

Once cool, pour into a tall glass over ice and enjoy!
