Quality Time, Quality Food

Hello Sweets,

I am tired, how about y'all?  I couldn't sleep last night because my head felt like it was going to explode, thanks to my injections :(  I had to be up early for my landlord to come by, and then do some quick grocery shopping for the dinner tonight.  Thankfully I got everything taken care of pretty quickly, and since I did all of the clean last night I managed to relax before prepping the food.  Tonight's post is going to be a short one because I didn't take any process photos (oops), and I'm feeling a little lazy lol.  But as I'm sitting here I'm thinking about baking something tonight, lol maybe muffins?  Who knows, but one things for sure, I'll have a new recipe tomorrow ;)

My grandparents picked a Mediterranean salmon as the star of the dinner, so I was tasked to prepare it and prepare some delicious sides too.  I chose to leave the salmon as it was, because it was already seasoned and didn't want to muddle the flavors up.  I personally love brussel sprouts, I know most people don't and it seems those that do cover them with cheese.  Yuck!  I stemmed them just enough to soften them, and then finished them off in the frying pan.  I added a little butter, salt, and pepper, then tossed them a little more.  I also made some brown rice for our starch, I didn't do too much to it.  I just made sure that it wasn't too dry, then added butter and salt.  It was a very simple dinner, but it was delicious.  My grandparents were very happy and satisfied.  Again my grandma ate a good helping of food, which is something she doesn't do enough.  We finished dinner off with the Chocolate Molten cake that I made last night, they both finished everything on that plate lol.  I really like making food for them, but it's even better now that I can have them here at my apartment :)

Now I'm going to go through some of my recipe books to see what delicious treat I can make tonight.  Until next time....

I Feel Like Chicken Tonight, Chicken Tonight!!

Hello Sweets,

Well I am officially back on Canadian soil :(, which is precisely why I didn't have a post for y'all yesterday.  Since I got an extra night with Nathan we spent a lot of time talking and enjoying our final night together :)  When I finally made it back to my home I had to run to the grocery store, because let's face it a girls gotta eat ;)  Since I am finally back on a somewhat normal schedule, I figured I would share a yummy treat with my lovely readers.  I have to say it feels really good to be writing again, I guess every once in a while a writer has to take a step back to put things into perspective.

As I am writing this post, I realize I have just dated myself lol.  The title of this post is from a catchy little jingle from the 1990's, even though the brand (Chicken Tonight) is still around you don't ever see their commercials.  The inspiration for the title came to me literally while looking at the pictures for tonight's post, I love when things just fall into place with little to no effort :)  A few months back Nathan came up to visit me for a few days, and we planned to go visit my mom and her husband.  Since we had an early flight the next morning, a red eye what fun lol, they offered for us to sleep at their house.  This lovely act of kindness would easily shave an hour off our drive to the airport, and with a red eye an extra hour of sleep is soooo worth it.  My mom makes pretty amazing chicken wings, but I haven't had them since I was younger and that was when she used to fry them.  Now she bakes them in the oven, they're crispy and not overly greasy.  What more can you ask for in a chicken wing?

Mommas Chicken Wings
Ingredients
Chicken wings (as many as you need)
Butter (you have to use it sparingly), melted
Ketchup (I used both regular and spicy)
Hot sauce, I used two types to kick it up a notch (use the spice level you're comfortable with)
Flour
pinch of salt
dash of pepper
dash of seasoning salt
 

Directions:
1)  Preheat oven to 400F.  In a large Ziploc bag, add the dry ingredients.  Use enough flour to completely coat every chicken wing, I used more than necessary so I didn't have to re-adjust the spices.  Shake until wings are completely coated, shake off any excess before placing on baking sheet.
 

2)  Place chicken wings on a tinfoil lined (I forgot to do that and they stuck a bit) baking sheet, bake until crispy (oops forgot to write the time down :/ )
 

3)  While chicken is cooking, melt butter (not too much or the sauce will just slide off).  Add enough ketchup to thicken the sauce, then add your hot sauce.  Taste test the sauce as you go, making adjustments until you reach you desired flavor.
 
 

4)  Once the chicken wings are crispy, gently toss them in your sauce.  Serve immediately, you can even dress it up with carrots and celery.

 
These were so simple to make, and they tasted better than the ones you get at the bar!  Well at least that is what I took from Nathan gobbling them up lol.  I am actually excited to expand to new and different flavors, I am very partial to honey garlic or anything with a sweet heat kick to it.  The only way you get good at flavor combinations is by trail and error, so if at first you don't succeed.... well you know the rest.  Basically what I'm trying to say is just go for it, and follow your taste buds.

I should take a moment to thank my momma for not only sharing her recipe with me, but also for teaching me how to cook with my senses and not a recipe ;)  I know this post isn't a sweet treat, but you know me I like to mix it up.  However, tomorrow's post is going right back to the sweets so get ready for something delicious and holiday appropriate!  Yes I know the main holidays are over, but I'm back logged :p  So consider the next few posts like a time machine, "once this baby hits 88 miles per hour, you're going to see some serious s%*t!".  If you like Marty McFly, you'll know what I'm talking about ;)  Until next time....

Forgetful Frank

Hello Sweets,

Happy Friday!!  The weekend is finally here, I don't have anything special planned besides spending time with the fam :)  I'm hoping to cook my grandparents a wonderful dinner this weekend, not sure what's on the menu yet, but in any case it will be delicious!  Do y'all have anything fun or delicious planned for the weekend?  I always look forward to hearing from you and love to chat, don't forget to drop me a line. 

So I was updating my recipe tabs last night, while I was transferring recipes over I realized I forgot a pretty important recipe.  When I gave y'all the recipe for my scrumptious Patriotic Pie I said I would give you the recipe for the pastry the next day, and I didn't lol.  I feel awful :( so instead of the tiny and sweet recipe today I'm giving y'all the most perfect pastry recipe.  My very good friend Miranda makes amazing apple pie, and since she has pastry experience I asked her for her recipe.  Thankfully she loves me and shared the secret with me :D    Tonight's post will be on the shorter side, but that's because I am in the kitchen making some sweet treats to share with y'all tomorrow ;)

Miranda's Perfect Pie Crust
Ingredients
2C all-purpose flour
1C butter, cold and cubed
1/4C cold water
1Tbs sugar


 

Directions:
1)  Mix all ingredients together, cutting in the butter with a pastry cutter or fork.

2)  Split in half when rolling out, put a little flour down so it won't stick.
 

3)  If making a creamy or custard like fillings (meringue pies too!), you can pre-bake at 200F for 30 minutes.  If making a fruit based pie, leave the dough raw.

Well there now I feel a whole lot better :)  I'm so sorry that it took me this long to see my error, but now you guys have a complete picture to making pies!  And as you can see this is a short little recipe and post, but that's only because I am busy in the kitchen as I write this.  Lol I've taken a few breaks so I could complete the post, see how much I love y'all ;)  Until next time................................................

Simply Elegant

Hello Sweets,

How has your Thursday been?  Mine has been super quiet, and frankly I think that was what I needed after a long day with the neurologist yesterday.  My body is really tired, my one knee is extremely sore, and I really don't know why.  I am doing cardio like my doctors have asked (no running just walking), so today I took the day off and listened to my body!  Do you ever have days like that? Where you know if you do anything physical it probably won't go too well lol, that was my day today.

So in Tuesday's post I talked about simplicity, and how I wanted to do something simply delicious (see what I did there lol).  I decided to make something I haven't had in over a year, but it is something you can enjoy with girlfriends over wine, or even an appetizer for a romantic dinner for two.  So are you salivating just imagining what I'm taking about?  Well let us get to it then shall we :)

Simple Oil and Vinegar Bread Dip
Ingredients
1 1/2Tbs Balsamic vinegar
4Tbs Extra virgin olive oil
Parisian bread loaf
Yup that's all you need

Directions:
1)  Preheat your oven to 250F, and warm bread until outside is slightly crisp.

2)  Place oil on a plate, then add the vinegar on top (you can drag the handle side of a butter knife through it)
simply elegant ;)


3)  Cut the bread up into bite size pieces, serve and enjoy!



Tadah! There's even a heart there, I miss my man :(

So there it is, simple and savory, a nice little grown up treat :)  Sometimes things don't need to be complicated to taste great!  Now I am going back to the research table because I promised Nathan I would back him a delicious and moist chocolate cake to celebrate his birthday when I am down to visit him for the holidays (and I never break a baking promise!).  With that I am going to say sometimes blog post don't have to be long to be fabulous ;)  Until next time..........
