Quality Time, Quality Food

Hello Sweets,

I am tired, how about y'all?  I couldn't sleep last night because my head felt like it was going to explode, thanks to my injections :(  I had to be up early for my landlord to come by, and then do some quick grocery shopping for the dinner tonight.  Thankfully I got everything taken care of pretty quickly, and since I did all of the clean last night I managed to relax before prepping the food.  Tonight's post is going to be a short one because I didn't take any process photos (oops), and I'm feeling a little lazy lol.  But as I'm sitting here I'm thinking about baking something tonight, lol maybe muffins?  Who knows, but one things for sure, I'll have a new recipe tomorrow ;)

My grandparents picked a Mediterranean salmon as the star of the dinner, so I was tasked to prepare it and prepare some delicious sides too.  I chose to leave the salmon as it was, because it was already seasoned and didn't want to muddle the flavors up.  I personally love brussel sprouts, I know most people don't and it seems those that do cover them with cheese.  Yuck!  I stemmed them just enough to soften them, and then finished them off in the frying pan.  I added a little butter, salt, and pepper, then tossed them a little more.  I also made some brown rice for our starch, I didn't do too much to it.  I just made sure that it wasn't too dry, then added butter and salt.  It was a very simple dinner, but it was delicious.  My grandparents were very happy and satisfied.  Again my grandma ate a good helping of food, which is something she doesn't do enough.  We finished dinner off with the Chocolate Molten cake that I made last night, they both finished everything on that plate lol.  I really like making food for them, but it's even better now that I can have them here at my apartment :)

Now I'm going to go through some of my recipe books to see what delicious treat I can make tonight.  Until next time....

For the Little Kid In Me!

Hello Sweets,

I hope everyone is enjoying their Friday, for all the working people you've earned it!  I am off back to Canadia tomorrow, normally I am completely distraught having to leave Nathan.  Not this time though, well maybe still a bit lol who am I kidding, only because I am getting ready to move :)  I still have a little packing to do (bedroom only), and I am doing my final walk through now that the apartment is completely finished.  I am one excited and happy girl, I've never lived in a brand new apartment so I am pumped!!

Since it's Friday and my last night with Nathan I figured a short post will be okay, don't worry there is still a sweet treat in store for y'all.  Today's delicious treat is brought to you on behalf of Kellogg's, and their delicious cereal Rice Crispies.  I bet y'all can figure out what we're making, but first let's go down memory lane for some history on my Rice Crispy story.  When I was small and even elementary school age, I ate almost all of my breakfasts with my grandparents.  Normally I would eat eggs and bacon, but some times I would eat a bowl of rice crispies.  However, when my grandmother had her back turned I would put a whole lot of sugar on top.  I mean a LOT, lol so when I'd scrape the bottom of the bowl I would get a spoonful of sugar :)  Of course my grandma would make rice crispy treats every once in a while, and I hadn't had them in years.  That is until a few months ago when Nathan asked me to make him some, and I am making them monthly now lol.  This is obviously not my recipe but I add a little more of some things.

Rice Crispy Treats
Ingredients
6C Rice Crispy Cereal
4Tbs Butter
42 Marshmallows
Love simple recipes

Directions:
1)  Melt the butter in a large pot over low heat.

2)  Once the butter is melted, add the marshmallows until completely melted.

3)  Remove from heat and add the rice crispies, mixing until blended.

4)  Grease a baking dish and pour the mixture in, pressing evenly flat with wax paper.

5)  Allow to cool completely before cutting.  Store in an air tight container.
yummy!!
See, wasn't that simple, easy, and delicious?  You can't beat cereal treats, they are your guide down memory lane to childhood.  The are many ways you can dress these bad boys up, from adding chocolate (chips or on top), nuts, food coloring, or even cutting them into fun shapes.  I'm sure you could even use those colored marshmallows for a cool little twist.

Well that's all I've got in me for now :)  I am off to enjoy one last night in my loves arms, I hope y'all are enjoying your weekend with what ever makes you happy!  Until next time....

Another Leaf on the Family Tree

Hello Sweets,

Alright day two in a row of posts, hazaw!!  Lol I know it's not much of an achievement, but it's the first step in blogging recovery (okay so maybe that's not a real thing).  However, it does feel wonderful to be back in my creative flow :)

I was going to blog about some dishes that I made while down in Texas, but then I went and had dinner with my grandparents tonight.  Normally we just do a simple dinner, but every now and then my grandfather will make a dish from his home country of Malta.  I realized something about Maltese food, they keep everything simple.  Letting all the ingredients sing together and not over complicating the dish.  Just like the Pastizzi's we made last year, this is a dish my grandfather brought over and made some slight changes :)  After speaking with him over dinner I have decided that the next time I make this I will be making everything from scratch (I know, not really a surprise).

Baked Rice
Ingredients
1 jar of spaghetti sauce (we used Ragu)
2 1/2C uncooked rice
4 eggs
1 can of corned beef

Directions:
1)  Preheat oven to 350F.  Place corned beef and tomato sauce into a saucepan, bringing to a boil so the corned beef has fallen completely apart (it will look like spaghetti and ground beef).

2)  Place the rice into a casserole dish, pour the sauce over top and mix thoroughly.

3)  Beat eggs in a separate bowl, then pour over the rice mixture stirring to fully incorporate.

4)  Top with a cup to a cup and a half of water and stir, cover with a lid and place in the oven for 1 hour.

5)  At the fifty minute mark remove the lid and place a knife in the center to see how wet it is (much like a cake).  If the knife comes out mostly clean leave uncovered for a few minutes, if more wet leave uncovered for the full ten minutes.

6)  Remove from oven and allow to sit for five minutes before serving.

Now I will be the first to admit that corned beef doesn't look that good, but once it's cooked you don't even notice that it came out of a can lol.  It's a simple and tasty dish that I've enjoyed since I was a child, and I will definitely be making this for my children :)  Sometimes I'll eat a little bit of cheese and a slice of bread with it, but I never add any additional seasonings.  Now with that being said I plan on using ground beef instead of corned beef, and I will make my signature tomato sauce.  When I make the new revised batch I will be sharing it with all my lovely readers :)

Now as I finish this last paragraph I have a smile on my face, it feels so good to be back writing again!  I have some recipes stashed away from my trip in Texas, and I need to make a dessert for my dinner with my grandparents Friday so I don't think there will be any more shortages ;)  Until next time..................

Stay sweet,
