A Little of This, A Lot of That!

Hello Sweets,

So after a really long sleep (ten hours) and a day of relaxing, I am still really sore and tired :(  I didn't expect to feel super and back to normal, but I definitely thought I would feel a little better.  It's unfortunate but I am used to this process, you'd think by now I'd be able to gauge what will hurt me and what won't.  Clearly I am not very good at that lol, but I made lots of lovely memories yesterday and that's all that matters to me.

Today's pie filling is a combination, I didn't have a lot of the main ingredient so when I came across this recipe it was absolutely perfect!  Let me see if this hint will help, what time of kiss do children love to do because of the sound it makes?  A raspberry lol!  My nephew does it all the time and he thinks it is just hilarious because it sounds so funny lol.  So our main star ingredient today is raspberries, but I didn't have enough to make a good fillings so I had to keep researching.  Then I came across a recipe that sounded so delicious to me, and it included one of my many favorite fruits.  That fruit is the one we used yesterday, nectarines!  The idea of raspberries and nectarines together sounded so good together that I didn't need to look any longer.  When I was little my grandmother used to grow raspberries and some other small fruits in her garden, I say hers because my grandfather's was the large vegetable garden.  It was fun at first, then the squirrels started stealing them before we could enjoy any and had to cover with mesh wire.  After that we had no problem ensuring we were able to enjoy them, and just like blueberries I just leave eating them by themselves.

Raspberry Nectarine Pie Filling
Ingredients
1C raspberries
1/4C nectarines, peeled, pitted, and thinly sliced
3Tbs sugar
2Tsp flour
 

Directions:
1)  Gently toss the fruit with the sugar and flour until they're evenly coated.
 

A lovely mixture of sweet and tart, add a heaping spoonful to your pastry cup and bake as directed in my previous post.  Allow to completely cool before enjoying :)
 

I know I've said it probably a million times now, but I really am happy and proud of how these tarts turned out.  Each flavor is distinctly different in their own way, some sweet and other more tart.  All of them delicious and filling enough that you don't have to eat more than one at a time.  Not to mention you don't feel guilty about eating them because they're very close to bite size!

I know this post is on the short side as well, but my migraine is making it very hard to concentrate :(  Well we have one last tart left to fill, now I've got to start thinking about what I want to make next, hmmmmm maybe something for dinner perhaps ;)  Until next time.......................................

Migraine Madness

Hello Sweets,

I must apologize in advanced for what will be a short post, and the fact that it is posted so late, but this dang migraine has really got a hold of me :(  So I thought it would be appropriate to take a post and talk about migraines and what they do to me personally.

Migraines are a chronic condition, that is moderate to severe headaches (although those of us with migraines don't like to refer to them as headaches), they affect everyone differently and you can see all the main symptoms here.  It affects everyone differently but none the less it is quite debilitating, I never used to even get headaches and then slowly but surely I noticed that Advil and Tylenol no longer were having an effect.

The way my migraines affect me are; sensitivity to light, smell (some are worse then others), sound, temperature, dizziness, nausea, and weakness.  These are only the main ways they affect me, it has actually taken me about four hours to slowly work my way through these three paragraphs :(  It even limits my ability to have a normal eating schedule, I stay away from sugary things and caffeine, so basically I become a hermit of sorts during these "attacks".  The most normal of noises become unbearable and I end up in tears with my head in my hands.

I guess what I am trying to get across with this post is information for those dealing with someone with migraines, we may seem like we are avoiding you or grumpy but really we just need the time to heal.  Although migraines suck they always end, and it really is learning how to manage them, unfortunately I chose to go the hermit route.  Until next time....

A Cure for my Craving


Hello Sweets,

I hope you all are having a wonderful Monday, unfortunately for me the theme for my day is migraine Monday :(.  I'm not sure if it has anything to do with the freezing cold wind, but I'm doing everything I can to help remedy the migraine and I think I'm doing a pretty good job.  I wanted to share with you guys my latest obsession, Cherry Craisins.  They are sooo yummy and good for you too!  I first tried them in a trail mix I bought (I didn't think I would like them), and I'm so glad I did, because you can never have too many healthy snack options right?

So lately I've been craving chicken, like really really craving chicken lol, and I'm not sure why. Maybe it's because I haven't had it in a while?  So on my way home from my meeting today, I decided to stop in the grocery store and pick up some chicken to cure my cravings.  So then it got me thinking about flavors, how did I want to prep my chicken?  So when I got home I took inventory of my spices.  I knew I definitely wanted to use garlic and red chili flakes but I felt like I needed something more.  Then I opened open the fridge and it was like the kitchen angels started to sing, tandoori sauce was what caught my eye.  I haven't cooked with the tandoori flavor in a very long time, but it smelt too yummy to pass up, thus a new Canuckette recipe was born!

Canuckette's Tandoori Chicken
Ingredients
chicken breast
garlic powder
red chili flakes
tandoori sauce

Directions:
1)  Rub chicken breast with garlic and red pepper flakes, then smoother in tandoori.  Let marinade for a couple of hours in the fridge (overnight if you can).

2)  Preheat oven to broil, fill bottom of the broiling pan with water.  Cook for 13 minutes.

3)  Remove from oven and enjoy!

This subtle spicy dinner definitely satisfied my chicken craving, and since I am one girl I have some leftovers for tomorrow :)  Is there something you've been craving lately?  Did you satisfy that craving, and with what?

While I was at the grocery store I picked up a couple of other mystery items.  The reason they are mystery items is because I am devising a new yummy recipe for tomorrow.  I want to make something subtly sweet with a hearty fall likeness to it.  But it will remain a secret until tomorrow, which means even more incentive to come back to my little blog :)  (sneaky sneaky)  Until next time.........
