Simply Sour

Hello Sweets,

I want to apologize in advance because this will be a fairly short post.  I had a hard time sleeping last night because of the needles I had earlier in the day, and I am still very sore :(  On the bright side, since I couldn't sleep I found myself looking for something to watch and came across a show I watched while in late middle school and high school.  See I have a soft spot for anything horror, and naturally I enjoyed watching "Tales from the Crypt".  Even though it is really old and sort of cheesy, it allowed me to forget about the pain even if only for a moment.  However, this is the first post in my fourth of July series :)  I only made two treats for the celebration as it was a small number of family that got together, so two posts will be about edible treats and the third will be about my very first fourth of July celebration.

Now I had always envisioned the fourth as a huge deal full of family bbq's, fun in the sun, and of course a crazy display of fireworks.  The last few years (according to Nathan) have been a little quieter but at very least I would get to experience "American" fireworks in all their glory!  So naturally I wanted to make somethings for the bbq portion, from scratch of course lol sometimes I go right in to house wife mode and there is no stopping me.  I wanted to make a beverage, a side salad, and a dessert but unfortunately I didn't have time to make the side salad (sad face).  So since I'm experiencing discomfort I thought I would start with the beverage and hopefully tomorrow I'll be as good as new, well at least to the best of my ability lol.

Fresh Lemonade (adapted from Disney Family Cookbook)
Ingredients
5-6 large lemons
1C sugar (I used about 3/4)
2qt water
an extra lemon to slice for garnish

Directions:
1)  Cut the lemons in half and squeeze each of them into a large measuring cup.  *should yield 1 1/2C of juice*

2)  In a large pitcher or mason jar, combine the juice and the sugar.  Stir in the cold water and serve over ice.

I didn't use as much sugar as it called for (or what is depicted for that matter), because I didn't want it to be overly sweet but more tart.  Nathan's dad, who you may remember as the lemon lover from my lemon cookie recipe, loved it too!  I even mixed it with some iced green tea I had made earlier in the week and hello yummy town :)  I guess it all depends on your preference for lemonade, but I will tell you once you make it you will never go back to store bought or frozen again.

Well y'all I am going to go kick my feet up and relax in hopes of forgetting about the pain I'm in.  As always I love hearing feedback from each of you, so don't hesitate to drop me a line in the comment box or shoot me an email :)  Until next time........................................................

Stay sweet,

When Life Hands You a Lemon.....

Hello Sweets,

We've all heard the saying "when life hands you lemons, make lemonade", well this post is a spin on the old saying.  Nathan's dad LOVES lemons, and I mean loves them, like he eats them as if they were an orange, so when he showed up with a giant bag of lemons, I wasn't entirely surprised.  However, when he told me I was to bake something out of them I was slightly perplexed.  I had never used fresh lemons for anything other than for sweet tea, but I was definitely up for the challenge :).

So I pulled out my favorite random ingredient recipe app and started sifting through the recipes, and of course the typical recipes came up; lemon meringue pie, and lemon biscotti among others, but just not what I was looking for.  Then a quick swipe to the next page, and low and behold I found a recipe fitting of the season, lemon sugar cookies with a nice lemon icing! So with out further ado, lets get to the cookies!

Lemon Sugar Cookies (via All Recipes iPhone app)
Ingredients
2C all-purpose flour
1/4Tsp salt
1 stick plus 2 1/2 butter, room temperature
1/2C plus 2 Tbs granulated sugar
3 lemons, zested and juiced (1/3C juice)
2 large eggs
1/4C whole milk
2 3/4C confectioners sugar
coarse sanding sugar, for sprinkling (optional)
(didn't realize the photo was blurry, sorry)

Directions:
1)  Preheat oven to 325F.  Whisk together flour and salt in a small bowl.  Beat butter, sugar, and lemon zest with a mixer on medium speed until pale and fluffy, about 10 minutes.

2)  Beat in eggs.  Reduce speed to low, and gradually beat in flour mixture.  Slowly add milk, and beat on medium speed for 5 minutes.

 3)  Transfer dough to a pastry bag fitted with a 1/2" plain round tip.  Pipe 1 1/2" rounds onto parchment paper-lined baking sheets.  Bake until bottoms are a pale gold, 16-18 minutes.  Let cool completely on sheets set on wire racks.

4)  Whisk together confectioner's sugar and lemon juice in a small bowl until smooth.

5)  Brush glaze onto cookies, and sprinkle with sanding sugar.  Cookies can be stored at room temperature for up to 3 days.

These cookies are not overly sweet and have a nice subtle lemon flavor.  Needless to say Nathan's father was extremely happy with the outcome :)   Everyone who knows me knows that this is the main outcome I am looking for when I bake, a happy tummy and a smile is all I need when I'm in the kitchen.

I just wanted to take a moment and apologize for my sporadic posts (at best), I'm sure everyone is understanding that this time of year is hectic, but none the less I will do my best to keep my posts more frequent again.  I already know what I'm going to blog about tomorrow, all about the delicious dinner I will be making my love tonight, which means all of my faithful readers will have my secret spaghetti recipe ;)  Until next time.......

This pirate isn't gettin' scurvy!! ARRRGH :p

Hello Sweets,

I hope you all had a fantastic weekend, and for all my adult readers, I hope you all had some Halloween fun out!  Did you do anything fun for Halloween?  What did you choose to go out as?  I would love to hear all about your fun Halloween adventures as it is one of my favorite time of the year :)

Nathan and his friend Dave took me out to a sports bar named Sneaky Pete's, for a couple of hours to have a fun night of Halloween debauchery.  Now this place was perfect for me, because my health is so unpredictable I require an environment that is not too loud, or crowded, and definitely smoke free, which this place met all of those.  Now I have never, and I mean never, been part of a couple that has matching costumes, but I've always wanted to.  Since I have the most amazing boyfriend, he said that he would be on board!  Needless to say, I was super excited, and immediately started thinking of what we could be.  In a close second was being ghost busters, but as you can tell by the post title, we settled on pirates!  The next crucial step was finding the perfect costumes.  Now Nathan and his family LOVE the Pirates of the Caribbean movie series, so he settled on "Black Beard", except instead of a beard he had scruff, and I think he looked great!  Then for me, we located a cute little female pirate costume with a bustier that had boning in it (something I've always wanted to wear), and even a cute little pirate hat!  So we got all dressed up; the pirate couple, and Nathan's friend Dave, dressed as Fred Flintstone (he made it himself, and looked amazing!), and headed out for a nice evening of friends, laughter, and maybe even a little singing :p

Sorry for the self photo, but I just love my tiny pirate hat and giant eyelashes
Dave aka Fred Flintstone
Awe aren't we cute :)

All in all it was a great night, even health wise (talk about good luck).  Dave and I even had the honor of being guest singers for the band!  Even if Dave got "Whiskey mic" lol, as he put it (greatest line of the night), when he forgot the lyrics to 'Ice Ice Baby'!

We had a blast

Since we had a great night, I decided today I would try making Nathans absolute favorite dessert, Coconut Meringue pie (via www.southernplate.com).  Now for those of you who do bake, we all know meringue is one of the most difficult types of pie, as the meringue is very fickle.  Needless to say I put a lot of pressure on myself, and I am sure it had a lot to do with the fact that both Nathan's mother, and grandmother had tried but not been successful .  Ekkk no pressure right?!? Lol well I dove in head first, like every baking excursion, and went in with the feeling that it would turn out fantastically.  Well I am happy to announce, dadaduh, that it was a success :)  Now I will share this delicious recipe so you can try it too!

Old Fashion Coconut Meringue Pie (via southernplate.com)
Ingredients for coconut filling
1/2C white sugar
1/3C flour
1?2C milk
1/2C butter, melted
1/2Tsp salt
1/2Tsp vanilla
3 eggs, separated (yolks for this half)
1C sweetened coconut flakes, heaping
9" pie shell, baked (I opted to use a pre-made graham crust)

Ingredients for meringue
3 egg whites
1/4C white sugar

Directions:
Pie filling
1)  Mix flour, sugar, salt, butter, milk, and egg yolks in a large sauce pan.  Cook over medium heat, stirring constantly with a wire whisk until thick, then remove from heat.
before and after

2)  Stir in vanilla and coconut.  Pour into pie shell, top with meringue.
smells delicious

Directions:
For the meringue
1)  Whip egg whites until foamy, then add the sugar.  Continue beating on high speed until soft peaks form.
foamy egg whites

now add the sugar
soft peaks :)

2)  Pour on top of the pie and spread to edges to seal, sprinkle additional coconut on top.

3)  Bake at 350F for 10 minutes, or until top is golden.  Refrigerate until completely cold before serving, if not it will be runny.
Mmmmm

Now since I was a pirate last night, in a funny link to my blog I decided to make a "Passion fruit sweet tea", as to not get scurvy lol!

Passion Fruit Sweet Tea
Ingredients
1/2C sugar
2Tbs honey
1 bag of Tazo Passion fruit Iced Tea
1 lemon, sliced

Directions:
1)  Bring 1Qrt of water to boil with the tea bag in the entire time.
Color releases instantly :)

2)  While the tea is boiling add the sugar and honey to an empty pitcher.

3)  Add the tea and stir to dissolve all the sugar and honey.  Then add the ice, allow to fully melt, then top with lemon slices and refrigerate for at least an hour.
so pretty and fragrant

Serve the sweet tea in a mason jar mug with a slice of the coconut meringue and send your taste buds to flavor heaven.
Looks delicious doesn't it?

Have you tried to make something you weren't sure if it would turn out like it should?  Was it a hit or a miss?  Do you like baking someone's favorite dishes, or maybe something just for you?  I would love to hear from you, whether it's fun Halloween tricks or treats, or the recipe you're the most proud of accomplishing :)  Until next time.....

Lone Star Love

Hello sweets,

Well we've made it to the middle of the week, and I'm not sure about you guys, but I am officially exhausted! My health hasn't been very good the last week, so I'm usually drained by mid afternoon :(, which also means I have not been cooking very much.  So I thought I would blog about the only other thing that is more important to me then being in the kitchen......the love of my life and my biggest supporter, Nathan :)

Four and a half years ago, my uncle Michael decided to come up to Canada for a visit (my family is 75% American and living in the USA).  My cousin Steve was home from serving in Iraq with the 10th Mountain division, and my uncle wanted to take us to see him since it had been a LONG time, and it was Steve's birthday (June 2008).   Now my cousin Steve and I had been chatting online since he got back stateside, and kept talking up his roommate, Nathan, to me and telling me that we would get along very well as we had very similar personalities.  The funny thing was that both Nathan and I had some less than desirable experiences with our latest partners, so both of us we very hesitant, but were opening to meeting each other.  Of course, my sister and I said yes, so we piled into my uncle's truck and made the six hour trip to Fort Drum, NY.
Uncle Michael, love him so much!

When we finally arrived, we met Steve at the hotel we were staying at, caught up a little, then went and got supplies for the birthday party!
My uncle Michael, sister Asha, me, and cousin Steve. Reunited!

After getting back to the hotel, we waited for Steve's friends to arrive and celebrate both Steve's birthday, and that all the boys came home safe.  Of course the entire time, Steve is telling me how much I am going to like his roommate, Nathan, and that we will hit it off right away.  Meanwhile,  inside I am getting more and more nervous to met this amazing man lol.  Well everything Steve said was true.  Nathan was smart, funny, handsome, and extremely polite (he is from Texas after all).  Needless to say we hit it off as soon as we met, and  it was like meeting an old friend.  We chatted for hours, and were often called out for segregating ourselves from the group lol!
Taken on the first night we met, and already looking like a couple!

For the next four months Nathan and I sent numerous texts back and forth, and spent hours chatting online, sometimes until the wee hours in the morning.  Then in October, I decided I wanted to see him again, and I decided to drive to Fort Drum, since when I went to visit my grandparents in Oklahoma in August (5 hours from where he lives in Texas), we missed each other by 1 day. :(  So I made the 6 hour drive to spend 24 hours with Nathan, the man whom I could not stop thinking about all day and night!  Needless to say we had a wonderful time; a nice dinner with great conversation, and a wonderful gentlemen.  I left with a smile on my face, and knew that I had met the man I would spend the rest of my life with.

Now I know what you're thinking; how could I be so sure when we had only known each other for six months?  Well you know all the cliche things in romantic movies; butterflies, day dreaming, all the things that make you scoff and say that's not real!  Well that is exactly what I was feeling (and what he was trying to deny lol), and I knew there was no way I was going to let him get away easily.  Now for the next three years, we only saw each other every August for a couple of days at most.  They were always romantic and unforgettable, but we didn't try to start a relationship.  Nathan told me from the get go that long distance relationships were hard to maintain (he knew from being in Iraq, and I had never been in one), but there was something nagging inside me that we would be able to make it work.  I respected his decision, and we both tried to move on with our lives, but remained close and talked every now and then.  Little did I know, some of his best friends and mother were telling him that he was crazy, and that clearly this girl really cared for him, and seemed wonderful (their words not mine!).  One of his oldest friends even told him that he couldn't be mad that I was dating someone at one point, because he told me to do so lol.
Well in August 2011, I went to spend a week with my grandparents in Oklahoma, and of course I let him know I would be there.  He asked if I would come and visit him for a day or so (he had to travel to back to Washington to deal with some work stuff), and I said as long as it was okay with my grandparents, I would be there.  Now everyone, and I mean everyone in my family knows how happy I am when I'm around Nathan, so they of course said yes!  So I made the five hour drive back to Dallas to spend a little over a day with him, and then drove back to my grandparents with an ear to ear grin. :D   Now little did I know, everything Nathan's friends and family had been telling him, and his feelings for me, had finally manifested into undeniable feelings.  So with two days left in my vacation, Nathan called me to see if I would come back, only this time to meet his parents.  I spoke with my grandma Oburni, and her, my grandfather, and I all agreed that things were changing.  You don't meet someones parents for the heck of it.  Five hours later, I was back in the arms of the man I had been chasing for four years and meeting his parents for the first time (they're awesome!).  The rest, is clearly history, since it's now 14 months later!
I am not super close with all of my family, but what Nathan has with his, is what I've always wanted :)  They are all very close, always there for each other, and would do anything at the drop of the hat!  A perfect example of how much they care for each other, would be what happened last night.  Nathan got a call from his uncle that his mother was being rushed to the hospital, which is 45 minutes away for us, with a possible heart attack :(  On our way rushing to the hospital, we got a follow up text saying they confirmed it was NOT a heart attack, but they didn't know what was causing her pain and shallow breathing.  So from 9:30pm to 5am this morning, Nathan, his uncle Michael, his aunt Cindy and I all stayed by his mother Darra's side.
Nathan being silly. lol  We waited a LONG time for test results

They finally figured out what was wrong, and it was nothing that couldn't be helped with medication, and it's not life threatening, but it's moments like these that make you thankful for the people closest to you, and not take a single moment in life for granted.  Needless to say, his entire family loves me (they tell him and I this all the time), they have already given me the "honorary Texan" title, and say I am family already!  I never thought that love like you see in the movies was real, but I am living in my very own romantic fairy tale, and yes, I know to some it's gross but I love it!

The very first "southern" recipe that was handed down to me, from my grandma Oburni, was for Southern Sweet Tea (ironically taught to me days before meeting Nathan's parents lol).  Now I have always loved iced tea (sweet tea in Canada), but once I tried sweet tea I can't drink the pre-made stuff anymore lol!

Southern Sweet Tea
Ingredients
1 Tazo Black Tea iced tea bags
3Tbs of honey
3/4C sugar
1 lemon, sliced
2C Ice
All the fixin's

Directions:
1)  Boil 1 quart of water, with the tea bag in the water before it starts to boil.
pre boil

2)  While the water is boiling,  slice the lemons in at least 5 slices.
love the smell of freshly sliced lemons

3)  When the water starts to rapidly boil, remove from heat as to not cause the tea bag to open.
Mmm fresh tea

4)  Add the sugar and honey into a large pitcher.  You can add more or less depending on your preference of sweetness.

5)  Remove the tea bag and pour into the pitcher.  Stir thoroughly and then add 2C of ice.
Almost there

6)  As the finishing touch, place the lemons on top and put in the refrigerator to cool.

Once cool, pour into a tall glass over ice and enjoy!

How do you guys like your iced tea?  Do you have any twists or family recipes you enjoy?  Let me know what you guys think, and until next.....

Stay sweet,
