A New Chapter

Hello Sweets,

I hope you all are enjoying the weekend, and that you're being creative in the kitchen :)  I am relaxing since my sleep has been so off lately, dang I just reminded myself that I didn't pick up the "sleep aide" that the nurse told to me to try lol.  Funny thing was that when I went to the drugstore today I walked down the toothpaste isle (by chance) and saw that toothpaste was on sale, and that reminded me I was almost out.  But of course I couldn't remember what I really needed right now, I swear my brain can be my worst enemy at times lol.  Oh well, guess I'll be going for a little stroll tomorrow.

I have some exciting news that I wanted to share with all of you, which is going to be in place of my typical recipe type post.  Starting on Monday I will be stepping into the role of the personal chef, not for pay but for something much better, my grandparents!  I'm very excited because my grandparents have always been there for me no matter what, and I mean in more ways than most ever have to be.  I proudly say that I am who I am today because of them, not to mention they both taught me very different things in the kitchen.  So every couple of days they're going to pick a protein and I will then create a meal around that.  This is going to allow me really explore food, because anyone that cooks for one knows it's harder to scale down then up with measurements.  Not to mention give me an audience to comment on my foods quality and taste, and trust me my grandmother will let you know if she doesn't like something lol but I love that about her.

Baking and Cooking is best done with the heart

Hello Sweets!

I'm sure everyone at some point in time has baked or cooked for that special someone in your life, and I am sure even if we messed it up by burning, misreading instructions, or just something tastes off that same person will either try to make you laugh about it or eat it regardless (these are why they are the loves of our lives right?).  I will be the first to admit both parts; a) I love to bake and cook for the love of my life, Nathan, and b) both him and his father got to witness me dumping a bowl of ingredients into the garbage because I swapped two of the ingredients measurements lol (mine was flour and it was WAY too much) and not to mention the cupcake debauchery (no tins lol needless to say they were a little flat and sad looking).  Hopefully when it happens you can do what I did and have a  good laugh at my silly error, and of course when you do it in front of others you might not hear the end of it, like I still do LOL!!

I tend to go a little crazy with Nathan, I bake cookies every time I visit (maybe it's because we are 2,083 kms away from each other that I tend to spoil him), on his birthday I told his mother and grandma that I would be baking his cake and there would be no more store bought cakes(ick!), and I even have made a flank roast with all the fixings for him and his brother (considering I had never made one before it was DELISH!).  But every time he always tells me "you know you don't have to do that right?", of course I know and I always say that I want to do it.  I have always baked and cooked for the end  result in watching someone enjoy the delectable morsels, more often then not I won't really eat much of what I make (which is probably good or I would be going to the gym more then doing what makes me really happy :)).  


Needless to say when he comes to see me there are goodies already waiting when he walks in the door.  The reason I tried a new recipe on Sunday was because he will be here tomorrow!!!!!  My roommate knew as soon as the house smelled like pumpkin and allspice that his visit was right around the corner (her and her son also benefit when I bake).  So after baking his pumpkin spice cupcakes I was left with pumpkin puree which got me thinking, I don't want to waste the leftovers so what can I make while he is here (I hate wasting anything)??

Since he is here for a few days I of course picked up breakfast food to make for him like fruit, eggs, and bacon (I'm a granola girl, just cannot get enough of my cereal hmmm maybe I should make my own!!).  Then it dawned on me, I always make pancakes so why not pumpkin pancakes!!  Of course I had to run this past him as he can sometimes be picky (oddly enough not usually anything I make him ;)), and he is game!  So guess what I'll be preparing tomorrow for Fridays breakfast......yup you guessed it Pumpkin Pancakes!  That also means a blog with a recipe and step by step pictures, I'm very excited.....and clearly a newbie lol.

What is Canuckette Creations?

Hey Sweets!! 

My name is Jennifer and I have a passion for baking and cooking, well maybe it's better to describe it as an obsession :p.  My goal one day is to do this as a career, working for myself either with a cute little shop or a catering business with the same title.  Now this will really be pursued once I am living in the great state of Texas with my love Nathan.  Until then I'll keep spoiling my family, friends, and co-workers, oh I should probably add I work for Canada's largest fitness company GoodLife fitness and yes I bring goodies both healthy and traditional to the office and you'll never hear a complaint!


My goal for this blog is to share my adventures as I explore my love of food and the prep that goes into it.  For as long as I can remember I have always been in the kitchen, whether helping my grandma with baking cookies, cakes, and everything in between to helping my mom prepare dinners.  I was fortunate enough to be gifted in both baking and cooking, my mom and grandma were not so fortunate lol it was only one for each.

Growing up in a single parent home and with a little sister, gave me that extra push to really step up my "kitchen game" early on.  Being mom's little helper went a long way back then, and now when it's Christmas baking season I'm the first she'll call.  Since my grandparents are getting older I will go over a few times a week to have a meal with them, and maybe even spice things up a bit with new seasonings.

Living with my friend and her son gives me the ultimate test kitchen, with two great taste pallets; 1) the picky eater and 2) the kid test.  I feel that these are the two hardest hurdles to pass when in the kitchen, and if you can get the green light from them you know you have an instant success.

So why did I decide to start a foodie blog you ask, well my good friend Sarah inspired me with her http://www.mymostlyhealthylife.com/.   She writes about healthy food choices (great paleo ideas), her love of fitness, and even a little fashion and fun now and then.  Definitely check it out she has a fun way of blogging and informing, plus she is awesome lol.  Why is my blog called Canuckette Creations? Well I was born and raised in Canada but most of my family is from the USA. Four years ago I met the love of my life, and ever since his family met me I was to be forever known as Canuckette (thanks to his dad). So in a homage to his father I thought of the clever name, plus I secretly love it haha but shhhh don't let him know.

Since it's Thanksgiving here in Canadia, I baked some yummy desserts for my grandparents dinner, but that was the same night I decided to start my foodie blog so sadly there is only one picture and no step by step pictures :(  But don't worry I will be baking my now newly famous Pumpkin Spice cupcakes with Brown Sugar Cinnamon Icing with graham crumble very soon, as in within weeks for my boyfriends family :) (they have seen and heard about them so there is no getting out of this haha).
